ITALIAN RICOTTA CHEESE CAKE
4 large eggs
1.5 lbs ricotta cheese
1t vanilla
1t cinnamon
1/2 C of sugar (add cup if you want it to be sweet)
2t grated orange zest
2oz Rum
Preheat oven to 350
Beat eggs, add ricotta, vanilla, cinnamon, sugar, zest, and rum, mix well
Pour into a greased 8 or 9 inch pan
Bake for about an hour to hour and fifteen minutes
Refrigerate until cold ..a few hours
